Cranberry and Cream cheese Muffins

this is a great recipe tested by me and my class (everyone loved it) i found it in my good food magazine and can also be found on there website : www.bbcgoodfood.com 
i added my own pictures to help aaand i changed the recipe a bit .

You will need :
  • 175g Cranberries (i used dried cranberries so i added more)
  • 100g soft cheese (like Philadelphia)
  • 250g Caster sugar
  • 200g plain flour 
  • 2tsp baking powder 
  • 2 eggs 
  • 75ml sunflower oil 
  • 1 tsp vanilla extract 
  •  
    1. turn your oven on to 180 degrees Celsius if its a fan. and put muffin cases in to the muffin tray.
    2. Next beat the cream cheese and 25g of sugar together then put in the fridge till the rest of the recipe is ready.(sorry didn't take a picture of this)
    3. After if you aren't doing this with dried cranberries you have to heat in a pan the cranberries and another 25g of the sugar until they pop, mash then cool. OR if you do it like me and used dried cranberries, heat them but WITHOUT sugar until there a bit mushy, but stir so they don't burn . maybe add a titchy bit of water which you'll sieve out and DONT add it to the rest of the ingredients. 
     
    4.  Then basically add everything else, sift the flour , add the rest of the sugar, baking powder, the eggs (wash the before hand) a pinch of salt,the vanilla extract, oil and the cranberries!
    5. Now stir everything together until its smooth is , there will be a bit of lumps because of the cranberries. and divide the mixtures cases.
    6.  Now get the cream cheese mixture out of the fridge. make a dip in the middle of the mixture (the ones in the cases) and add a blob . its pretty tricky i used two spoons, one for opening the dip the other for the cream cheese mixture adding :P 
    7. put them into the oven and bake till golden for about 25 minutes then take them out a leave them to cool.
